Indian Masala Pasta
I love a good Indian twist for dishes from around the world. In general pasta is my favorite, I love the Arrabiata Pasta but none of the original Italian pasta were able to stop my craving for Indian Masala Pasta.
Heart wants what it wants and since I didn’t get masala pasta in USA. I started playing around and created this recipe. Such a simple one yet a delicious one you must try.!!! Now I wont drag anymore. Let’s jump in to the Recipe!!!
Ingredients:
- Pasta – tricolor fusilli Pasta from Costco!!
- Tomato Paste – Make sure you buy organic Tomato Paste as Tomatoes are part of Dirty Dozens!!!
- Garam Masala Powder: You can make at home or can get one from Indian Store.
- Chaat Masala: You can get one from Indian Store.
- Herbs/ Spices: Parsley, Basil, Thyme, Rosemary and Oregano
- Multi-vegetables – I used frozen ones but you can use fresh carrot, beans, peas and corn

Instructions to Make Indian Masala Pasta
How to Cook Pasta:
- Place the pasta pot in stove with water. (Make sure to use lot of water as pasta needs more water to move around and avoid clumping up)
- Once the water is boiling add salt and herbs.
- Now add Pasta and stir to avoid pasta sticking to the bottom
- Stir every now and then to avoid sticking.
- Cook time varies as per the pasta you are using. Cook according to instruction and al-Dante.
Masala Paste:
- Place large pan in a medium flame and pour olive oil
- Add onion and sauté till translucent.
- Add Ginger and Garlic and Sauté slightly
- Now Add capsicum and Salt and Sauté.
- Add multi-vegetables, and cook till its half done.
- Add Tomato Paste and spice powder such as chili powder, coriander powder, Cumin powder, Garam masala powder and Chaat Masala and salt to taste.
- Now add water (you can use pasta water too) and cook for 5 mins until raw smell goes and water evaporates.
- Once it has become the paste in desired consistency, turn off stove
Assembly:
Mix masala paste and pasta till everything is combined properly. Then Add Tbsp of Ketchup and cheese and serve it hot.

Spicy Indian Masala Pasta
Equipment
- 1 Pasta cooking pot
- 1 strainer I use strainer that fits into my pasta pot. but this is completely optional and you can drain it using strainer too
- 1 Knife
- 1 Cutting board
- 1 Large Pan
- 1 Laddle
Ingredients
- 1 Tsp Olive Oil
- 1 Onion
- 250 grams tomato paste
- 2 capsicum I use red and yellow for sweet taste
- 1 tsp ginger garlic paste
- pasta Measure according to the style you use. I used fusilli and measured approx. 2 ounces for each person
- 1 tsp Chili powder Adjust according to taste and spice level
- 1 tsp Corriander Powder
- 1 tsp Garam Masala Powder
- 1/2 tsp Cumin Powder
- 1/4 tsp Chaat masala
- 1 tbsp ketchup
- cheese Parmigiana and mozzarella according to your liking!!!
- 1 tsp parsley
- 1 tsp basil
- 1 tsp thyme
- 1 tsp oregano
- 1 tsp rosemary
- 1 cup frozen multi-vegetables you can use fresh carrot, beans and peas too
- 1/2 cup water
- salt to taste
Instructions
- Place the pasta pot in the stove with water
- Let it boil a little, then add salt and herbs (parsley, basil, thyme, oregano and rosemary)
- Cook the pasta till al-Dante
- Now drain and keep it aside
- In Pan, Add 1 tsp of oil and Add onion and sauté till translucent
- Then add Ginger garlic paste
- Once the raw smell goes away, add capsicum and sauté for 2 mins
- then add multi vegetables and sauté for 5 mins or vegetables are half cooked
- Now add 250 grams tomato paste and 1/2 cup water
- Now add all the spices (Chili powder, Coriander Powder, Garam Masala Powder, Cumin Powder and Chaat masala powder)
- Add salt to taste and cook for 5 mins or until raw smell goes away
- Now mix the masala paste and Pasta
- Now add 1 Tbsp of Ketchup and cheese
- Serve it hot.
- My kids love them with extra cheese on top.
Notes
- You can also add broccoli, zucchini.
- You can garnish with fresh basil.
- I make it less spicy for my kids but you can add more spice
