Spicy Indian Masala Pasta

Ever since I moved to USA, I had wide variety of food options to try and especially when it came to Italian, I had hundreds of option but my heart wants what it always wants. I was craving the masala pasta I use to eat in India. This recipe helped me put an end to the craving. It taste soo good and since its made from Durum wheat pasta, its healthy too.

Equipment

  • 1 Pasta cooking pot
  • 1 strainer I use strainer that fits into my pasta pot. but this is completely optional and you can drain it using strainer too
  • 1 Knife
  • 1 Cutting board
  • 1 Large Pan
  • 1 Laddle

Ingredients

  • 1 Tsp Olive Oil
  • 1 Onion
  • 250 grams tomato paste
  • 2 capsicum I use red and yellow for sweet taste
  • 1 tsp ginger garlic paste
  • pasta Measure according to the style you use. I used fusilli and measured approx. 2 ounces for each person
  • 1 tsp Chili powder Adjust according to taste and spice level
  • 1 tsp Corriander Powder
  • 1 tsp Garam Masala Powder
  • 1/2 tsp Cumin Powder
  • 1/4 tsp Chaat masala
  • 1 tbsp ketchup
  • cheese Parmigiana and mozzarella according to your liking!!!
  • 1 tsp parsley
  • 1 tsp basil
  • 1 tsp thyme
  • 1 tsp oregano
  • 1 tsp rosemary
  • 1 cup frozen multi-vegetables you can use fresh carrot, beans and peas too
  • 1/2 cup water
  • salt to taste

Instructions

  • Place the pasta pot in the stove with water
  • Let it boil a little, then add salt and herbs (parsley, basil, thyme, oregano and rosemary)
  • Cook the pasta till al-Dante
  • Now drain and keep it aside
  • In Pan, Add 1 tsp of oil and Add onion and sauté till translucent
  • Then add Ginger garlic paste
  • Once the raw smell goes away, add capsicum and sauté for 2 mins
  • then add multi vegetables and sauté for 5 mins or vegetables are half cooked
  • Now add 250 grams tomato paste and 1/2 cup water
  • Now add all the spices (Chili powder, Coriander Powder, Garam Masala Powder, Cumin Powder and Chaat masala powder)
  • Add salt to taste and cook for 5 mins or until raw smell goes away
  • Now mix the masala paste and Pasta
  • Now add 1 Tbsp of Ketchup and cheese
  • Serve it hot.
  • My kids love them with extra cheese on top.

Notes

  1. You can also add broccoli, zucchini.
  2. You can garnish with fresh basil.
  3. I make it less spicy for my kids but you can add more spice
